Candied Citrus

1 Lemon or Orange
250g White Sugar
¾ Cup Water


  1. Preheat oven to 50 °C and line a baking tray with baking paper
  2. Cut citrus in thin slices removing any seeds
  3. Add sugar and water in a saucepan over medium heat and allow to boil until sugar starts to dissolve
  4. Once sugar in dissolved turn to low heat and add the citrus slices in a single layer. Allow to simmer, turning occasionally
  5. When the citrus rinds become soft, gently remove the all the citrus on to the baking tray
  6. Bake for 10 minutes, then turn the citrus. Bake for another 10 minutes and allow to cool at room temperature. Once cooled candied citrus can be used as toppings or snacks.
