Citrus Fruit and Nut Muesli Bars

100g Unsalted Butter
50g Brown Sugar
100g Brown Rice Syrup
200g Vivien and Alisha Raw Honey, Fruit and Nut Muesli
150g Self Raising Flour
90g Rolled Oats
1 teaspoon Lemon Essence
20g Dried Apricots (Diced)
20g Goji Berries
20g Sultanas
20g Candied Lemon Slices (Diced)


  1. Preheat oven to 150 °C and line a baking dish 18cm x 25cm with baking paper
  2. Add the muesli, lemon essence, flour and oats to large bowl. Mix to combine
  3. In a medium saucepan add the butter, brown sugar and brown rice syrup, stirring over a medium heat until the mixture starts to boil and the butter is melted
  4. Add the wet mixture to the dry ingredients, and mix using a spatula until well combined
  5. Spoon the mixture into the prepared baking dish and flatten using the back of the spoon until firmly packed in
  6. Add the diced apricots, sultanas, candied lemon slices and goji berries on top of the slice by gently pressing the fruits using the back of a spoon
  7. Bake the muesli slice for 20 – 25 minutes or until golden brown
  8. Allow the slice to cool, and cut into desired muesli bars. Keep in airtight container.
