Dark Cocoa Muesli Bar

150g Dark Dutch Cocoa
250g Rice Malt Syrup
120g Coconut Oil
300g Vivien and Alisha Raw Honey and Almond Muesli
150g Rice Bubbles
200g Sultanas
60g White Chia Seeds


  1. Preheat oven to 150 °C and line a baking dish 18cm x 25cm with baking paper
  2. Add the muesli, rice bubbles, sultanas and chia seeds to large bowl and mix using a spatula until combined
  3. In a medium saucepan add the cocoa powder, rice malt syrup and coconut oil and stir over a medium heat until the mixture melts togethers
  4. Add the cocoa mixture to the dry ingredients, and mix using a spatula until well combined
  5. Spoon the mixture into the prepared baking dish and flatten using a spatula
  6. Bake for 15 – 18 minutes and allow slice to cool until room temperature
  7. Cut into desired muesli bars. Keep in airtight container and refrigerate
