Ginger Muesli Bars

125g Unsalted Butter
70g Brown Sugar
100g Self Raising Flour
240g Raw Honey and Coconut Muesli
100g Chocolate Chips
2 Tablespoons Ground Ginger
100g Glace Ginger


  1. Preheat oven to 150 °C and line a baking dish 18cm x 25cm with baking paper
  2. Using a food processor, pulse the Muesli until a fine crumb forms
  3. Add the Muesli crumbs, flour, chocolate chips and ground ginger to large bowl. Mix to combine
  4. In a medium saucepan add the butter and brown sugar. Stir over a low heat until the mixture starts to boil
  5. Add the wet mixture to the dry ingredients, and mix using a spatula until well combined
  6. Spoon the mixture into the prepared baking dish and flatten using the back of the spoon until firmly packed in
  7. Chop the ginger to thick strips and press into the top of the muesli slice
  8. Bake the muesli slice for 20 – 25 minutes or until golden brown
  9. Allow the slice to cool, and cut into desired muesli bars. Keep in airtight container.
