120g Unsalted Butter
200g White Sugar
1 Egg
150g Vivien and Alisha Raw Honey and Coconut Muesli
150g Self Raising Flour
150g Oat Flour 50g Desiccated Coconut
100g White Chocolate (Grated)
Method
Preheat oven to 150 °C and line a baking tray with baking paper
Using a food processor, pulse the Muesli until a fine crumb forms.
Using an electric beater, beat the butter and sugar until light and fluffly. Add the egg and beat until well combined
Fold in the muesli, flour, coconut and chocolate until a dough forms
Taking handfuls of the dough, gently roll the dough into a ball, and press using your hand to create a round cookie – continue doing this for the rest of the dough
Bake the cookies for 15 – 18 minutes or until golden brown
Allow the cookies to cool and serve. Keep in airtight container.
